sunday waffles

 This morning my kids asked me to make waffles.  I was happy to oblige. Our favorite recipe comes from my niece Jenny (thanks Jenny!) and can be found at the end of my post.....    
         So we are staying home this morning enjoying lds general conference...we love this for many reasons, but the kids favorite reason, is that they can  watch church in their pajamas.  The morning session was amazing and I'm looking forward to the afternoon session...it's been one of those peaceful days where the kids have been nice to each other (gasp! I know) and I just feel that content, calm, grateful feeling that my life is so good.





                           Whole Wheat Waffles

MIX:
8 c. wheat flour
1/3 c. baking powder
1/2 c. sugar
4t. salt
1 1/4 c. powdered milk

To make 4 waffles:
1 1/2 c. mix
1 1/4 c. water
1/4 c. oil
1 t. vanilla
2 eggs-add yolks to mix and beat whites separately (until light and fluffy)

    mix everything else, then fold egg whites in...cook and love!
     (Remaining mix can be kept in freezer for up to 3 months)
